Organic Beef Sirloin

Cooking time: 25 min.
Ingredients
2 Tbs. plus 2 tsp. olive oil
3 lbs. boneless organic sirloin steak, cut into 1/2 inch cubes
2 celery ribs, trimmed and chopped
1/2 lb. mushrooms\cooked, thinly sliced
2 onions\cooked, finely chopped
1 cup dry red wine or chicken stock
2 cups beef stock
2 Tbs. cornstarch
1/4 cup water
1/4 cup tomato purée
2 tsp. lemon zest
Cooking Directions
Heat oil in a heavy nonstick skillet over medium-high heat.
Sauté beef 3-4 minutes, until just cooked through. Transfer to a
platter and set aside. Sauté celery, mushrooms and onion 5-7
minutes, or until
onion is soft. Add wine and stock. Dissolve cornstarch in water
in a small bowl and add to sauce. Bring to a boil stirring
constantly. Add remaining ingredients and salt and pepper to
taste. Reduce heat to medium and simmer 10 minutes, stirring
occasionally. Add meat and simmer 2-3 minutes until hot.
